About Open Sesame
Background: Hi! We are Chris & Claire of Open Sesame. We are classically trained chefs who are making a new, modern kind of kebab, fusing flavours from the Middle East and around the world with our own low ‘n slow smoking and BBQ techniques, spice rubs and hand crafted sauces. Food Ethos: We only use the best, local ingredients, native breed meat, and make everything from scratch, on site everyday. Never from packets. Never from frozen. Taking our flavours to the next level. Concept: To produce food we love to eat, using unique, tried and tested recipes: old and new, using high end ingredients to produce restaurant quality for the festival foodie. All served from a hand built steam punk horsebox. Food: Indulgent modern kebabs - pillowy soft naans wrapped around melt in the mouth organic meat smoked and BBQd, organic salad and finished with fresh herbs hand crafted sauces. Dry aged Belted Galloway bavette straight from Dartmoor. Hand cut, spiced and smoked. Paired with sweet pickled red cabbage, rose harissa, herbs and wrapped in a warm naan. Don't forget lashings of house sauce & chilli.
Texas Smoker Overnight Pork
Sweet, smokey Deep South spices on free range pork. Smoked over night in bourbon liquor to produce a crisp yet soft, deeply satisfying taste sensation. Matched with sweet pickles, fresh leaves and house sauces.
