About Sen Noods

With Godfrey growing up in Hong Kong, he always enjoyed traveling around and trying different Eastern and Southeast Asian cuisines. There is always one type of dish that is enjoyed in all eastern cultures, and that is a hot bowl of noodle soup. There are so many different versions and each represents ingredients that were special to the regions, and their cultural influences. We are two friends from school, and we want to share the noodles we grew up eating, and the ones we enjoy making. We hope to make both traditional and non-traditional noodle soups, when we travel, we especially hope to incorporate locally sourced ingredients into your East Asian inspired noodles dishes. Godfrey Lui “Being from Hong Kong, I have had the privilege to be exposed to a huge variety of cuisines. However, ever since I started University in the UK, I found that the only way to enjoy good food while saving money living in London, was to start cooking myself. From then on, I have found joy not only in eating good food but also seeing the happy faces when others enjoy the food I made. Even after I started working as a Data Scientist in the city, my mind still revolved around what I should get for lunch or what I should cook for dinner. This eventually led to the decision of starting a food truck after lockdown, when I have learnt that this is what I enjoy doing the most.” Johnny Rogerson “After growing up in a very multicultural Switzerland, where it was the norm to be invited to friends' houses for lunches or sleepovers, where parents who were originally from different backgrounds would serve me different cuisines than what I would’ve been used to at home. Therefore from an early age I’ve been fascinated by flavours and how you can incorporate them to make a dish stand out from the rest. I carried this on when I became a chef a few years ago, but unfortunately I lost my taste & smell to covid in early 2020, and yes it might just be good timing with my nervous system growing back, but coincidence or not, Godfrey’s noodles brought a smile back to my face after a very depressing year in terms of food. May as well share that feel-good feeling via East Asian noodles with as many people as possible.”

Hong Kong Curry Noodles

The curry soup is made with blended up vegetables, fried in our curry powder mix. It is a hong kong curry because dried seafoods are added to create it's distinctive hong kong curry style of flavour. The noodles are topped with tofu puffs which is cooked with the soup to absorb all of its flavours, and our pan fried curry spiced boneless chicken thighs.

Vegan Ramen

It's a vegan ramen we have invented, to mimic the rich flavour of a tonkotsu ramen. The soup is made from Kombu dashi, miso, doubanjiang and soy milk. It is topped with teriyaki aubergines and mushrooms, sweet corn and beansprout.

Chashu Ramen

Although the same soup as the vegan ramen, it is topped with Chashu, and ramen egg. Chashu is a tied braised piece of pork belly that has to be sliced and charred with a blow torch to order. The eggs are marinated after being soft boiled and peeled.

Dan Dan Noodles

An inauthentic take on the traditional Dan Dan noodles. It has a rich peanut flavour that when mixed in with the noodles will provide a satisfying bite of spicy porky peanuty saucey coated noodles.
