Finding a passion for pizza ignited a flame, and during lockdown I started my own takeaway pizza business from my own back garden, with my partner delivering pizza to our locals all whilst working full time jobs and juggling looking after our 2 year old son. People seemed to quite like the pizza, so I teamed up with a local street food venue and gave up my full time job to pursue my career as a pizzaiolo. Two years down the line, nothing has changed, I still love making pizza. We only use the best ingredients, most of which are imported from the Campania region of Italy, to give an authentic Italian taste. Dough is made to order, back at our base and proofed for a minimum of 20 hours, there is nothing frozen about it. San Marzano tomato’s give our sauce a sweet taste, being broken down by a mill to to give a rich texture. Fior Di latte mozzarella melts under our flames without releasing fatty oils. Caputo flours and a long proof to make our dough light, airy and digestible. We have catered for weddings, private functions, birthday parties all from our bespoke horse box in 2021 but we had to put that on hold for a while because we now have our own street food restaurant and bar in Daventry, Northamptonshire. But we’re now in a position to offer our services out on the road again doing what we love best, making peoples special days as good as they can be.
