Known as the "Egg Prince" on the street food scene, Joe has an encylopaedic knowledge of - you guessed it - eggs. He swapped corporate for cooking after realising he was too much of an introvert to thrive in a busy corporate environment, while his partner Christine still balances running Shokudo with a full time job at a tech startup. Together, they have operated at street food markets and major events this summer and we think they are set to soar next year and beyond.
