Ryan grew up working music festivals on his mum's Thai food trailer, which is what made him want to become a chef. He launched Phat Khao in Norfolk during Covid, running pop-ups at village halls and pubs around Norwich from a horse trailer he'd converted himself. The name is a play on khao phat, the Thai word for egg fried rice. Together with his wife Rebecca, Ryan is now a mainstay of the UK festival scene, serving up some of the best pad thai that we've had on site.
