We offer authentic Malaysian/Singaporean rice and noodle bowls, such as our signature beef rendang and braised pork belly. In London, these dishes are typically served in Asian sit-down restaurants, however, we like to stick to our rootsand serve these dishes as a fast takeaway, as how it is done in Singapore/Malaysia. This specific “fast food” cuisine is known as “Cai Fan” (菜饭), or colloquially recognised as “Economy Rice”. Economy rice is a combination of meat and vegetable dishes and rice, commonly found at. street vendors or hawker centres in South East Asia. I was working for the NHS as an inpatient Hospital Social Worker during the global pandemic in 2020. As a result of lockdown, many eateries including the hospital canteen were closed. In a bid to boost morale, I decided to prepare free meals for my hospital colleagues. This fuelled my passion for catering and thought that something bigger could come out of this. I started selling rice boxes over instagram as a side hustle, where I would meet my customers at tube stations during lunchtime. Rice Bandits was subsequently birthed, and my life changed (for the better!) when I joined a business incubator program in August 2022! After successfully completing the business incubator program, we commenced market trading in September 2022. Today, we currently trade at 4 markets per week: Westminster’s Strutton Ground market and KERB markets. We also actively cater for offices and large scale events such as MCM Comic Con, Accenture Summer Party. Adobe Summer Party, Natural History Museum Staff Party and other corporate institutions. This dynamic duo serves up dumplings using original recipes passed all the way down their family tree for generations and they'd love to serve them up at your event! Dad Joe ran his own restaurant for 31 years and has been making dumplings since he was a kid running around the streets of Hong Kong. He and daughter Chantel decided it was about time to take Dad's recipes to the road and thus the Chubby Dumpling truck was born. (Joe used to call Chantel a Chubby Dumpling as a child when she would eat all his dumplings!) Their delicious food is served out of their stunning black 1992 fire engine at markets across London and they have served at numerous prestigious events, including various festivals, the Formula 1, film sets including Warner Bros Studios, Netflix and Pinewood. They offer range of meat and vegan options, including classic pork and onion, chicken and shiitake mushroom and vegan butternut squash dumplings which are steamed then fried and served with noodles tossed in a creamy peanut-sesame sauce, served with Asian pickles and topped with crispy fried shallots, spring onion, coriander and black and white sesame seeds. To accompany the dish they have home-made chilli oil and a chilli sauce (both made by Mum!). There is always one type of dish that is enjoyed in all eastern cultures, and that is a hot bowl of noodle soup. There are so many different versions and each represents ingredients that were special to the regions, and their cultural influences. We are two friends from school, and we want to share the noodles we grew up eating, and the ones we enjoy making. We hope to make both traditional and non-traditional noodle soups, when we travel, we especially hope to incorporate locally sourced ingredients into your East Asian inspired noodles dishes. However, ever since I started University in the UK, I found that the only way to enjoy good food while saving money living in London, was to start cooking myself. Even after I started working as a Data Scientist in the city, my mind still revolved around what I should get for lunch or what I should cook for dinner.
