Valencia is a fantastic region in the east of Spain, on the coast of the Mediterranean Sea.
It has a very particular freshwater lake called La Albufera, connected by a natural canal to the Mediterranean Sea. This particular phenomenon makes this lake exceptional for growing round rice, typical of all the Spanish rice dishes.
Valencia is very rich in different rice dishes, but overall it's most famous for being the birthplace of Paella.
The Paella is the typical Sunday family lunch, usually made by the fathers, they teach their children from an early age how to cook it, keeping all the love and tradition. When the paella is made, the father puts the paella pan in the middle of the table and all the family eat from the same pan with a wooden spoon, helping to keep all the family united, eating from the same pan and spending the Sunday together.
When I moved to Wales in 2013, I decided to start making paellas for me and my friends, and, in 2014, I thought of starting my own business making paellas in small festivals and markets. The business grew, and I started doing bigger and better festivals and events, adding vegetarian and seafood paella, and some typical tapas to consolidate a healthy and diverse menu, keeping always in mind where I come from.
Luckily the business survived the pandemic. I'm proud of what I have achieved so far. I'm happy to be back working at festivals and looking for new horizons.
