Charles and his team are an absolute dream to work with. I don't think I've ever met someone as passionate about food and incredible service as Charles. Everything he offers sounds too good to be true, but it's not - he really goes above and beyond for every single event.

Rump Steak Cap (Picania)
Otherwise known as Picania, this cut is from the top of the rump. It has a layer of fat across the top, similar to a sirloin, which gives it a lovely buttery flavour.
