Flame Grilled Queen Scallop, Dashi, Celeriac XO & burnt lemon gel
This is a fish starter course, being served on our tasting menu. It combines a scallop cooked over coals, covered in a roasted celeriac brunoise mixed, with dried prawns (XO)giving it a rich umami flavours. It is then topped with a piping of gel made from roasted lemons and shavings of bonito.
BBQ'd Pork Tomahawk, clementine glaze, pumpkin waffle, herb & creamed cabbage
A slow roasted pork cutlet on the bone, glazed with a clementine sweet & sour syrup. Side of a waffle made of caramelised pumpkin puree and covered with shredded cabbage tossed in a creamy herb emulsion. Also a side of rich sauce made from roasted pork bones and dashi.
Spiced donut, roast apple jelly, miso caramel, popping candy
A donut infused with Xmas style spices (cinnamon, nutmeg etc), served with roasted apple jelly (made from the juice of the roasted apples), a caramel with miso and sprinkle of popping candy
