The ideal welcome for your guests. Our charcuterie cones come with one cheese and one charcuterie of your choice and are dressed with seasonal fruit and vegetables.
This is the mildest of all the Lyburn cheeses matured for only 8-12 weeks. This does not mean it lacks in flavour because it hits all the right smooth & creamy notes.
Taking a Lyburn Gold cheese but not maturing it for so long works wonders with the addition of garlic & nettle. The mild milky flavour with the savoury edge of garlic, nettle, chives, parsley, paprika, ginger, and horseradish makes for a great way to pack flavour on a platter.
Using a Lyburn Gold, it is sent to a local smoker who smokes it for 48 hours. When it returns it has a brownish red colour and a lightly oak flavour which works beautifully with the Dorset Chorizo Picante.
This is a hard cheese matured for 8-9 months. At this age it starts developing the characteristic golden hue of older Lyburn cheeses and nutty flavours break through. Adorn a slice on a beef burger for an indulgent cheeseburger.
This is oldest of all the Lyburn cheeses at 18 months old. Old Winchester has a crystalline crunch texture and shares similarities to an aged gouda. A brilliant alternative to a hard-Italian cheese due to the vegetarian rennet used in making; it can be grated. Winner of 2 stars at the Great Taste Awards 2020.
A mild cheddar with a deep amber colour. Dorset red is soft in texture with a deep smokey flavour as a result of being cold-smoked over oak chips. Perfect alongside any chorizo, pairing wonderfully with The Listening Station Shiraz.
Stoney Cross is like a slightly squat Caerphilly cheese. At only 8 weeks old this cheese as a buttery lactic flavour with a lovely soft to the bite texture. The slight open curd nature of this cheese provides a lightness and would pair well with stronger flavours.
A soft white surface mould ripened pasteurised cheese first made in 2006 and is a blend of the classic brie and camembert. When young this cheese has a firm textured, sharp lactic flavour. As it ages the texture changes to a softer paste with the flavour becoming more familiar to the taste of camembert.

Ensuring the highest quality meat Hartgrove farm use free-range pigs for a tender & succulent cut. They then add sweet & Smokey paprika the classic ingredient of Chorizo which adds heat to casseroles or stews, a perfect flavour for chicken dishes or as part of a charcuterie platter with the Lyburn lightly oak smoked.
Spreadable and versatile salami made from intensely sweet & fruity chillies providing a warming kick. It is a perfect topping for a pizza, stirred into pasta or simply spread on sourdough alongside your favourite cheeses.
Free range pork neck fillet which is dry cured in a gentle mix of herbs & spices for depth of flavour. To develop the flavour further it is then air dried for 3 months which results in a fantastic alternative to Parma ham.
Free-range pork salami with the addition of aromatic fennel and the heat of white pepper. This makes for a delicious addition to a charcuterie board.
Smokey with a spicy heat this salami is smoked over oak for 3 days before air-drying. The caraway seeds give this a subtle aniseed note but this beautifully flavours the wild Dorset venison.
Made using wild Dorset venison they then add foraged sloes, fresh garlic, and a good splash of red wine for intensity of flavour. To finish it is then smoked over oak chips for 3 days.
The richness in colour and the intense gamey meat flavour ensures this chorizo packs all the flavour. Chillies combine with the smoked paprika & fresh garlic beautifully. Once again, this chorizo is perfect on a pizza, to spice up a casserole or stew, or simply to eat as it is.
Free-range Gloucester Old Spot pork salami with pink peppercorns & Purbeck cider. Pink Peppercorns add a beautiful aromatic hit with a sweetness from the Purbeck cider just at the end. Try with the Old Winchester Cheddar for a sophisticated pairing.
Starting with grass-fed Dorset Aberdeen Angus beef they than add a cure of crushed bay leaves, red wine, rosemary, and a long-ageing process that makes for a truly special charcuterie.
