Dos Mas Tacos is run by twin brothers Rupert and Charlie. From their initial home in a gazebo, they've since had residencies at some of London's top street food markets, catered at corporate events for some of the UK's biggest brands, and had popups at the likes of the National Theatre. Now, you can find them permanently at Spitalfields Market, or book them for your own event.

We grabbed five minutes with Rupert - and managed to try some of their absolutely top notch tacos too.

When did you decide to start Dos Mas? How long was there between initial idea and actually starting the business?

Back in 2017, we actually came up with the idea while working in the super yacht industry. We were inspired by the street vendors and the incredible food we experienced in Mexico. Motivated by this inspiration, we decided to start our own business. Within 6 to 8 months, we quit our jobs and fully committed to bringing our vision to life.

What is your best selling dish?

Our Beef Birria Tacos

What is your personal favourite dish?

It was actually an old dish we had on the menu which was our pork carnitas.

Is there a Mexican dish you'd love to bring to the menu but haven't yet?

Taco de Cabeza - Cabeza can include a variety of meats from a cow's head, such as cheek, tongue, eyeballs, and brain. However, it typically consists mostly of meat from the muscles around the cow's head, which is braised for tenderness. Not sure how ready the UK is for that!

Any street food traders you particularly admire?

Steak Haus, Only Jerkin, Truffle London, Kolkati. All delicious concepts that are consistent with a really great brand. They're fun, exciting. And all extremely hard-working and dedicated owners that I have always looked up to.

What's your favourite restaurant in London?

La Gavroche.

What is your go-to cocktail order?

Spicy Margarita
