After 15 years working in hotels, events and award winning restaurants the streets were calling my name. Hook & Cook was born after being at a festival and hearing traders talking about local produce, ethical and sustainable measures but seeing fish being really underrepresented. So I set about a few dishes that I knew would get people excited about eating fish, spoke with a fishmonger I'd known for years about getting fish only from day boats so it would support local communities and eventually settled on slinging out great fish finger sandwiches to the Great British public. Hook & Cook mainly are a streetfood, parties, events and pop up restaurant offering with the ability to do small private dinner parties as a tasting menu. As a business we have only 3 rules "is the fish seasonal?", "has it been caught ethically and by a day boat?" & "do people want to eat it?". If the answer to all 3 is yes, we go for it. Early in menu planning we noticed we were actually naturally dairy free using things like coconut milks for depth of flavour and took the decision to use gluten free breadcrumbs so we could easily cater for Coeliacs and other Gluten-Free dietary requirements by switching out the bun as they presented themselves. We are really passionate about using local produce, bold flavours and keeping the menu seasonal, so you'll see the fish we use change throughout the year, this helps us prevent overfishing and also help support the British fishing communities. We have great suppliers we work with who help us do this.

Where possible, we use local suppliers for our produce. Our meat is produced by Dunwood Farm in Staffordshire and is only two miles from our base. We offer an all-in service, which includes packaging, forks, plates, condiments, etc., so you don't have to lift a finger. We are highly experienced with events, including festivals such as Leeds Festival and the Isle of Wight Festival, as well as various weddings, birthday parties, and other celebrations. Two Al’s Bodega Bites was conceptualised in 2022 with the goal of bringing some of these ideas and passion for affordable high quality food to the people of London for the very first time. More than just food, Two Al’s aim to offer a theatrical, engaging experience, firmly rooted in the Bodegas of New York City. Our concept is one of fast, high quality, sustainable and locally sourced food. Our menu is centred on a never before seen in the U.K, New York City cult icon, the Chopped Cheese. The Chopped Cheese has been a staple in NYC for a number of decades now, but has failed to make the same global impact as some of its more widely known cousins, such as the Philly Cheesesteak or the Po’Boy. Typically served in a hero roll (hoagie), the base sandwich is filled with a burger patty, chopped on a grill with adobo seasoning, onions, green pepper and american cheese, condimented with ketchup, mustard, mayo, lettuce and tomato. Many variations exist, leaving it open for innovative interpretation. Recently the sandwich has been creating a stir on social media, inspiring chefs across the USA and overseas to include it in their menus. Two Als Bodega Bites is the first company to serve a Chopped Cheese specific menu in the U.K. Our brand is one of vibrant, youthful colour and theatre. Each and every chopped cheese is made before the customer’s eyes in a masterful fashion. Our colours, logo and design are inspired by the very places from which the Chopped Cheese originates; NYC’s vibrant Bodegas. We prepare most of our food from scratch, bar our bread which we source from the Artisan bakery Millers. Our specialist sauces are made from fresh ingredients off site. Our meat provider is Flock and Herd, a Peckham based butcher who specialises in free range grass fed meats. Our fresh produce is sourced from Borough Market’s Teds’ Veg.
